They smelled so good, it was very hard to make them and not try to sneak a bite, I had to keep reminding myself that I was making a lean batch later for myself. ;) I used the Tollhouse Chocolate Chip recipe, you can find it on the back of most Tollhouse Chocolate Chip bags. I used 1/2 bag of chocolate chunks and 1/2 bag of butterscotch chips. P.S. to anyone who wants a batch (for a limited time only), tell me what your favorite kind of cookie is and i will send them to you! Batter Batter Paige Smith image Today had a rough start. I woke up and began to make flash cards for my Bio test, but I was so antsy and anxious for no reason, I couldn't stop moving and I started hyperventilating and I had to stop and calm myself down for a while before I could even function this morning. I decided it would be a good idea to spend the afternoon doing something that would relieve some of the stress and tension and worry that I've been carrying around for a while, so I spent it making cookies and lots of them. Hello Dolly Bar Hello Dolly Bar Paige Smith image Modified from www.smittenkitchen.com 1 1/2 jar apple baby food (substituted for 2 stick of butter) 1 1/2 cup graham cracker crumbs 3/4 cup ghiradelli dark chocolate semi sweet chocolate chips (lean!) 3/4 cup shredded coconut 1 cup chopped walnuts 1/3 cup sweetened condensed milk Preheat oven to 350 degrees. Add graham cracker crumbs to baby food. Mix then press evenly into the bottom of baking pan. Layer coconut, walnut and chocolate chips on top of graham cracker base. Pour sweetened condensed milk over whole mixture. Bake in oven for 25 to 30 minutes, or until the top is light brown. * the original recipe calls for 1 stick of butter, 1 1/2 cup chocolate chips, 1 cup butterscotch chips, 1 cup shredded coconut, and 1 cup pecans. yielded 24 bars at 151 calories each! Hamantaschen Hamantaschen Paige Smith image Modified from www.smittenkitchen.com Yield: About 22 2-inch cookies 1 Jar apple baby food 3 ounces cream cheese at room temperature 3 tablespoons sugar 1/4 cup egg beaters 1 teaspoon almond extract 1 1/3 cups plus 4 teaspoons flour 1/4 teaspoon salt Various Jams - I used sugar free apricot and sugar free blackberry Cream butter and cream cheese together until smooth. Add sugar and mix for one minute longer, then egg, almond extract, and salt, mixing until combined. Finally, add the flour. The mixture should come together and be a tad sticky. If it feels too wet, add an additional tablespoon of flour. Form dough into a disc, wrap in plastic and refrigerate for at least an hour. Preheat oven to 350°F. To form the hamantaschen, roll out the dough on a well-floured surface until it is about 1/4-inch thick. Using a round cookie cutter, cut the dough into circles.
